I have a very picky toddler so I am always
looking for ways to get her to eat. She loved this, plus it's healthy
and I was able to toss it in my slow cooker and forget about it for a
few hours.
I took a package of ground turkey breast, sliced
carrots and diced tomatoes, sage, parsly and a shake of ground cinnamon
and let it cook on high for about 4 hours. After about 3 hours I took a
spatula and chopped the meat up. If it's frozen, you don't need to add
water but if it's not, add a tiny bit of water.
My daughter loved it and so did my husband.
60 day challenge
I am challenging myself to bake/cook/slow cook different things daily (some dinners, some deserts, some special holiday favorites) for the next 60 days. All homecooked and as much from scratch as I can. I'm making it public and sharing the good recipes to motivate myself. If I get a recipe from another source, I'll cite it. If it's an original I'll mention it and if it's a family dish (we have no family "secret" recipes) I'll mention it's a family recipe.

Day 1- Lasagna
Today, my husband and I baked lasagna, he
picked up salad and a pre made garlic bread (all we had to do was heat
it a few minutes in the oven.)
Recipe for the Lasagna
(amounts differ for each size dish, there are no exact amounts)
Cook enough noodles to cover 2 layers in the size pan you're making.
Brown enough ground beef to cover the noodles (2 layers)
1 jar of spaghetti sauce (half layer 1 and half for the other layer)
2 8ozs bags of mozzarella cheese
Layer half the noodles, half the meat, half the sauce and cheese and repeat.
Cook for 40 minutes at 350.

My introduction
I have decided to do a 60 day food challenge through the holidays. I am posting the different recipes I try or make up and pictures of how they turn out.
If you do something everyday for a month, it sticks so I'm publicly doing this for 2 so I'll stay with it and get out in the kitchen more.
I am a stay at home mom with a 2 1/2 year old who is a pretty picky eater and could easily stand to gain (I'm being pushed so some recipes may be higher in calorie content for her and some may be lower since I'm working on losing 30lbs)
I try to use healthy ingredients, more natural and I don't use coconut or or alcohol, I always find subs.
Some recipes I'll cite off Facebook or Pintrest, some will be my mom's recipes, cookbooks or magazines and some (I'll mark) are my own creations.
